Sriracha Green Bean and Tofu Fry

Prep time: 25 minutes | Cook time: 17 minutes | Serves 4 to 6

4 teaspoons canola oil, divided

2 tablespoons rice wine vinegar

1 tablespoon sriracha chili sauce

¼ cup soy sauce

½ teaspoon toasted sesame oil

1 teaspoon minced garlic

1 tablespoon minced fresh ginger

8 ounces (227 g) extra firm tofu

½ cup vegetable stock or water

1 tablespoon honey

1 tablespoon cornstarch

½ red onion, chopped

1 red or yellow bell pepper, chopped

1 cup green beans, cut into 2-inch lengths

4 ounces (113 g) mushrooms, sliced

2 scallions, sliced

2 tablespoons fresh cilantro leaves

2 teaspoons toasted sesame seeds

Combine 1 tablespoon of the oil, vinegar, sriracha sauce, soy sauce, sesame oil, garlic and ginger in a small bowl. Cut the tofu into bite-sized cubes and toss the tofu in with the marinade while you prepare the other vegetables. When you are ready to start cooking, remove the tofu from the marinade and set it aside. Add the water, honey and cornstarch to the marinade and bring to a simmer on the stovetop, just until the sauce thickens. Set the sauce aside.

Preheat the air fryer to 400ºF (204ºC).

Toss the onion, pepper, green beans and mushrooms in a bowl with a little canola oil and season with salt. Air fry at 400ºF (204ºC) for 10 to 12 minutes, shaking the basket and tossing the vegetables every few minutes. When the vegetables are cooked to your preferred doneness, remove them from the air fryer and set aside.

Add the tofu to the air fryer basket and air fry at 400ºF (204ºC) for 6 minutes, shaking the basket a few times during the cooking process. Add the vegetables back to the basket and air fry for another minute. Transfer the vegetables and tofu to a large bowl, add the scallions and cilantro leaves and toss with the sauce. Serve over rice with sesame seeds sprinkled on top.
